Production and treatment method: Mild, summer warm climate with a warm autumn with low rainfall, cold winter as well as loose, sandy soil. Harvest is done by hand in October and November of every year. Stigma remnants are dried until water content is done to 5-20%. The drying process prevents deterioration and mould. It causes the characteristic aromatic substances and the crumbly consistency of saffron. In order to maintain the aromatic scent, saffron should not be boiled for too long. It is recommended to soak the stigma in a bit of lukewarm water and to add it to the dish along with the liquid at the end of cooking. More intensive colouring can be achieved when grinding fresh saffron threads.
