It is not a bad sign if honey crystallizes after being stored for several months. Crystallization does not affect the quality of honey. In fact, pure, natural and undiluted honey should crystallize after some time.
If, however, you prefer your saffron honey to have a liquid consistency for aesthetic reasons, you can delay crystallization significantly by storing it in a cool place. Be careful to avoid extreme temperatures, as both freezing and warm environments accelerate crystallization.
