For the majority of people it would prove to be an intriguing discovery, as saffron salt is both an innovation and a treasured secret. As two spices of the highest quality and purity are brought together, a gourmet product is born – one that is effective and simply incorporated in the everyday kitchen.

Fleur de Sel distinguishes itself from other salts in taste, form, manner of production and has been subject to a significant gain in popularity as a pure and delicious French sea salt in the past years. It may be concluded that is due to its rise in popularity that today, Fleur de Sel is produced in more countries, such as: Brazil, Canada, Portugal, Mexico and Spain.
The Fleur de Sel that we selected for our MIASA saffron is produced on the Île de Ré, an island off the western coast of France. On this island – amidst the rough Atlantic Ocean – near La Rochelle, Fleur de Sel has been produced traditionally since the 12th century. Surrounded by beautiful landscapes, local families have passionately and industriously been cultivating the exquisite salt for generations. Quality over quantity and a production free of chemical additives is practiced here – a premise that is of great relevance to MIASA.
The qualities of nature
Fleur de Sel (“flower of salt”) has its name thanks to the way it is produced. The extraordinarily clean water of the Atlantic Ocean is directly channelled at the island’s coast through clay tunnels into clay beds, where it consistently increases its levels of salinity naturally due to the warm climate of the region.
The result of the perfect combination of the elements – a dry east wind, an abundance of sunshine and hot temperatures – enables an ideal evaporation of the seawater and the crystallisation of the sea salt. A great deal sinks to the bottom of the salt evaporation ponds due to its size and weight and is harvested as common sea salt. A small part of the salt contained within the seawater, however, crystallizes on the water’s surface as a delicate, paperthin skin of salt that is made up of light and crispy flakes: the flower of salt, the Fleur de Sel. These are then carefully drawn to the banks of the salterns with the help of wooden rakes, where they are then hand-harvested by skimming them off the surface with wooden scoops.
A gentle production and a special flavour
Thanks to the gentle way it is produced, Fleur de Sel retains a consistency that is slightly damp while being fluffy and crispy. In the production of our Saffron Salt – Fleur de Sel, the delicate flakes of salt meet our pure saffron threads, which we attentively grind before we add them to the Fleur de Sel.
