Our vegan feast: Saffron and Almond Foam Dessert

It should be common knowledge by now that vegetarian and vegan diets are far from monotonous. The purely plant-based diet has after all gained entry into numerous gourmet kitchens. Unsurprisingly, more and more people want to reduce or even eliminate their meat consumption. There are many reasons based on both health and ecological factors. Our following recipe could make the vegan diet more enticing to you. We took the lead from the Scandinavians and combined saffron with a sweet dessert. The Swedes understand better than any other nation how to refine sweet things with the sophisticated spice. They especially love to bake with saffron and their traditional recipes make us look forward to Christmas time impatiently!

Our fluffy Saffron and Almond Foam Dessert is the perfect way to for foodies to pass the time until Christmas. Incidentally, it is not only vegan and can easily compete with non-vegan desserts on flavour but it is also a lot healthier and lighter than, say, a rich Mousse au Chocolat. On top of that, this delicious dish takes no time to prepare and only requires five ingredients.

Recipe
for 4 servings

1l almond milk
4 tbsps sugar (or alternative sweetener)
75g corn starch
1 tbsp vegetable margarine (tip: Alsan is particularly butter-like)
1 sachet of MIASA Saffron

Low-Carb-Option: replace the sugar with an alternative natural sweetener such as stevia, xylitol or erythritol and you can indulge even if on a low-carb-diet.

Preparation

Mix the corn starch with a dash of almond milk and the rest of the milk with the sugar (or alternative sweetener) and the saffron and heat in a saucepan. Using a hand blender, beat until frothy. Quickly stir in the prepared corn starch and then fold in the margarine. Pour into small bowls and cool immediately.
